Creamy Baby Potatoes

This is an amazing recipe of potatoes (although potatoes in any form are awesome). It's creamy on the outside, crunchy when you bite it, and so soft on the inside. Once you start eating it, you cannot stop.


The ingredients are as follows:

Boiled Baby Potatoes
Mayonnaise - 4-5 tbsp
Chilli sauce - 2 tbsp
Green sauce - 3 tbsp
Chopped Onion (medium) - 1
Green Chilli - 1 big chopped
Salt as per taste
Black Pepper Powder - 1/2 teaspoon
Red Chilli Powder(kashmiri deggi mirch) - 1/2 tsp
Mustard Oil for frying
Chilli sauce




Method:

-In a bowl, put mayonnaise, red chilli sauce, mint sauce, salt, black pepper powder, red chilli powder, chopped onion and green chillis, and mix it really well.
-Now prick the baby potatoes with a fork.
-In a separate bowl, add cornstarch, salt, red chilli powder, and some water and mix it well. The batter should be of thick pouring consistency.
-Now dip the potatoes in the batter and coat them with it nicely.
-Now heat oil in a pot (kadhai) and when its hot enough(on medium heat), add your potatoes to it. 
-Fry them for 1-2 minutes.
-When they're done, put them on absorbing paper and let them sit.
-When they are not as hot, press them with your hands. 
-Now fry them again for 1-2 minutes till they are crispy.
-Now mix the potatoes into the mayonnaise that we made in step 1. Coat them well.
-Now they're ready to be served!
