Mango Cheesecake

This recipe takes up a little more time than my usual dessert recipes, but it is SO worth it! This is the perfect thing to eat in summers when you're having a sweet tooth. It consists of my two favorite things; mango and cream!

The mango jelly at the top with the creamy mango filling in the middle and the oreo base can tempt anyone and everyone.

Just put it on a beautiful cake stand, put a cake slice server with it, and it becomes super fancy.

Here's the recipe:


Ingredients:


For 1st Layer(Oreo Crumble Layer):

1.5 packets of Oreo Biscuits
1/3rd cup butter

For 2nd Layer(Mango Cheesecake):

2 packets Philadelphia Cream Cheese
1 can of condensed milk
2 cups mango puree
China grass powder(Agar Agar Powder) 
2 tablespoons
2 drops of yellow food colour
1 drop of mango essence

For 3rd Layer(Mango Jelly):

Water half cup
Mango Puree half cup
Agar Agar Powder 1 teaspoon
2 drops of red food colour


Method:

-Crush oreo biscuits in a food processor into a fine powder
-Add melted butter to it and blend. The mixture should look like wet sand.
-Take a spring form pan and put the oreo mixture
-Press it evenly with a spatula to balance the base
-Put it in the fridge for half an hour to set

-Now put cream cheese and condensed milk in a bowl in a bowl and mix it well.
-You can use a mixer to do this as well.
-Now in a separate bowl take agar agar powder and pour water and mix it well.
-In a pan, pour the mixture and heat it. Bring it to a boil.
-Switch the flame off and pour mango pulp. Mix it well and add it to the cream cheese.
-Mix that too.
-Add1-2 drops of yellow food colouring and mix it.
-Pour it on the oreo base layer
-Tap it to even the layer, you may use a spatula for the same also.

-Now in a pan, put agar agar powder and pour water on it. Mix it.
-Bring it to a boil. Stir it.
-Add mango pureé.
-Now switch off the flame and add few drops of red food colouring.
-Strain it to get a smooth fine pureé.
-Cool it a little and spread the last layer on top of the cheesecake evenly and put it in the fridge for 4-5 hours to set.

-Now with an off set spatula, loosen the sides of the pan. 
And you're done!
