Red Sauce Pasta

Red Sauce Pasta-

My daughter absolutely loves this recipe of red sauce pasta. I did make the authentic Italian Pasta in Red Sauce once, but honestly the taste was a little bland for our Indian taste buds and I had to add this little flavour to enjoy it in our style. So here's the recipe for that.



Ingredients:
For boiling pasta-
250 gm Penne Pasta
4 Cup Water
2 tablespoons Oil
Salt as per your taste
For making sauce-
4-5 Tomatoes (red firm)
2 tablespoons Extra Virgin Olive Oil
1/2 teaspoon Red chilli flakes
2 tablespoons chopped garlic

1 tablespoon Garlic cheese Italian herb seasoning 
1/2 teaspoon Oregano
1/2 teaspoon Basil (dry)
1/4 teaspoon Black pepper powder
2 tablespoons Tamato Ketchup
Salt as per taste
Parmesan cheese or any process cheese for sprinkle






Method:

There are 3 steps to make this recipe:

1- Make the Pasta Sauce
2- Boil the Pasta
3- Mixing the sauce and pasta together


Step 1:

Put water in a pan and heat it.
Add salt, and olive oil.
Now add your penne pasta in it and boil it for 7-8 minutes (or as per your packet instructions).










Your pasta should be al dente cooked (cooked as to be still firm when bitten)












Now drain the water and keep it aside.












Step 2:

For this, you would need firm, red tomatoes. If you use sour/desi tomatoes, then your sauce will turn out to be sour too and the pasta would be extra tangy.

Cut the tomatoes from the top, removing their woody part/pith.
Put them in boiling water for 5-6 minutes(till the skin starts peeling off)
Now peel off the skin nicely and roughly chop the tomatoes.
Grind them in a mixie.

Now heat a pan and pour extra virgin olive oil in it.
Add finely chopped garlic and red chilli flakes and stir them together.
Now pour the tomato paste and saute it.
Add salt, black pepper powder, cheese and Italian herb seasoning(or any other Italian seasoning), oregano, and dry basil leaves.
Now add about 1-2 tbsp of tomato ketchup. This is my own twist which gives the recipe an Indian twist and goes with the kind of taste us Indians are used to.
Mix it and put it on low heat for 5-6 minutes till the sauce thickens and the quantity halves.

Step 3:

Add the boiled pasta to the sauce and mix it well.
Now serve it hot.
You may sprinkle some parmesan cheese/grated processed cheese on top.

And now it's done! Enjoy it with your family and friends, or if you're too hungry, just eat it all yourself!
